The kitchen of De Vrienden van Jacob is modern French with a Mediterranean touch. The kitchen brigade work under the inspiring guidance of Executive Chef Alain Alders: "I am always searching for a good balance between classic and modern tones. The basis of our dishes is mostly classic but they are prepared with the most modern kitchen techniques and presented in a contemporary manner. Eye-catching, ingenious and pure. Appealing to the taste of connoisseurs of today, with plenty of room for creativity but without becoming ‘art for the sake of art’. With this I choose for the combination of light digestible ingredients and garniture whose flavour match with one another. Most certainly we work with high quality, daily fresh and seasonal ingredients."
Since September 1st, 2011 Alain Alders has a new right-hand man: Lars de Bois. Lars has been Souschef at De Vrienden van Jacob for 5.5 years and has proved his affection and passion for cooking plentifully. Lars: "I may have the final responsibility for the quality of the dishes, but we could not bring the top quality we want, without the effort and craftsmanship of the whole team.”
